When it comes to steak night, nothing hits quite like a smoky, flavor-packed ribeye. This recipe is a Fire & Salt Co. favorite — simple ingredients, serious flavor, and a perfect cook every time. Whether you're a seasoned pitmaster or firing up the smoker for the first time, this smoked ribeye will have everyone asking for seconds.

Ingredients:

  • 1 (16 oz) F&S Ribeye

  • 2 tablespoons Olivelle Wild Rosemary Infused Olive Oil

  • 2 tablespoons Heath Riles Beef Rub

    Directions:

    1. Prep the Ribeye: Pat your ribeye completely dry with a paper towel to remove any surface moisture. This helps the olive oil and seasoning stick — and creates a better crust.
    2. Season: Drizzle both sides of the steak with Olivelle Wild Rosemary Infused Olive Oil. Then liberally apply Heath Riles Beef Rub, making sure it's spread evenly across both sides. Allow the steak to rest until the seasoning looks absorbed and no longer dry — about 20–30 minutes.
    3. Smoke: Preheat your smoker to 225°F. Place the ribeye directly on the grates and smoke until it reaches your desired internal temperature:
      1. 115°F - Rare
      2. 125°F - Medium Rare
      3. 135°F - Medium
      4. 145°F - Medium Well
    4. Optional: Sear for a Perfect Crust: If you want that iconic crust, remove the steak when it's 10 degrees shy of your target doneness. Crank your grill or smoker up to 450°F. Sear each side for 1 minute, then flip and repeat for an additional 1 minute per side.
    5. Rest and Serve: Remove the ribeye from the grill and let it rest for 5–10 minutes before slicing into it. Resting keeps all those flavorful juices locked inside.
